Recipes with Champignons

CHAMPIGNON CREAM SOUP

  • 300 g of champignons
  • Half of onion
  • 40 g of butter
  • 20 g of flour
  • Soup, chicken or veal
  • 100 g of milk cream
  • 2 yolks
  • Two spoons of cherry wine
  • Pepper, salt
  • Parsley
  • Old bread

How to make it?
Braise the onion slices and champignons on the butter. Sprinkle it with flour and mix it properly. Pour the soup and let it boil for ten minutes. Reduce the temperature. Mix the yolk with milk cream and cherry wine and all of it mix with soup. Mix it well so the soup gets denser form. Take care the soup NOT gets boiled again. Add the spices – salt, pepper and parsley.  Optionally, serve it with toast.


CHAMPIGNON DRESSING

  • 0.5 kg of champignons
  • One small onion
  • 50 g of butter
  • O,2 l of milk cream
  • Parsley leaf
  • 0,1 l of white wine
  • Salt

 

How to make it?
Braise small onion pieces on butter, add tiny champignons slices and braise it all together for about ten minutes constantly mixing. Add parsley and milk cream immediately and white wine 2 minutes after. If isn’t dough enough you may add one spoon of flour at the end. Salt and spice it optionally.
